I was swamped with work this evening, so I opted for a quick dinner of penne pasta and parmesan cheese. But, still needing my veggies, I wanted something that I could quickly prepare while the water was boiling and the pasta was cooking. I went with an old favorite recipe: honey roasted carrots.
